Ashwani Basantani | Founder, Project X Restaurants

Ashwani Basantani brings 27 years of experience across hospitality and the restaurant industry, spanning five-star hotel environments, international hospitality in Auckland, premium dining, bar operations and multi-unit restaurant leadership.

His career includes responsibility for a 52-restaurant portfolio across India and building a restaurant business from one outlet to five. This combination of institutional hospitality experience, operating leadership and entrepreneurship gives him a perspective that extends beyond opening restaurants to understanding what makes hospitality businesses commercially viable, operationally disciplined and enduring.

Founded in 2022, Project X Restaurants brings this experience into restaurant consulting, concept development, business restructuring, operational excellence, recruitment and scale-readiness, working across premium restaurants, fine dining, bars, QSRs and emerging food formats.

The objective: build hospitality businesses with stronger fundamentals, better execution and lasting commercial value.
